Risotto verde is a lovely way to bring fresh greens to the dinner table. This Italian-inspired rice dish combines the creamy texture of slowly cooked rice with the fresh flavor and vibrant color of leafy vegetables and herbs.
It makes a satisfying main course for a relaxed meal or a flavorful side dish alongside roasted vegetables. Although risotto has a reputation for requiring constant attention, the method is straightforward once the basic technique is understood.

Ingredients

This recipe takes about 15 minutes to prepare and 25–30 minutes to cook. It uses familiar ingredients and a gradual cooking method to create a balanced, creamy dish. You will need:
- 320 g Arborio or carnaroli rice
- 1 liter vegetable stock, kept warm
- 200 g fresh spinach
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 40 g unsalted butter
- 60 g finely grated Parmesan-style vegetarian cheese
- 2 tbsp chopped fresh parsley
- Salt and black pepper, to taste
This makes 4 servings.

Steps

The method relies on adding warm stock a little at a time while stirring. Follow these steps in order:
1. Warm the stock. Pour the vegetable stock into a saucepan and keep it warm over low heat. Warm stock helps maintain a steady cooking temperature when added to the rice.
2. Prepare the greens. Rinse the spinach thoroughly and drain it. Place it in a pan with a small splash of water and cook for two to three minutes until wilted. Let it cool slightly, then blend it into a smooth puree. Add a little stock if needed to help it blend.
3. Soften the onion. Heat the olive oil in a wide, heavy-bottomed saucepan over medium-low heat. Add the chopped onion and cook for four to five minutes, stirring occasionally, until soft and translucent. Stir in the garlic and cook briefly.
4. Toast the rice. Add the rice and stir for about two minutes until the grains are coated with oil.
5. Add the stock gradually. Pour in one ladle of warm stock and stir until most of the liquid has been absorbed. Continue adding stock one ladle at a time, stirring regularly before adding the next portion.
6. Incorporate the spinach. After approximately 15 minutes, stir in the spinach puree. Continue cooking and adding stock as needed until the rice is tender with a slight firmness in the middle. This usually takes around 18–25 minutes in total, depending on the rice.
7. Finish the risotto. Remove the pan from the heat. Stir in the butter, grated vegetarian cheese, and chopped parsley. Taste and adjust the seasoning with salt and black pepper.
8. Rest and serve. Let the risotto rest for one minute, then stir once more, adding a little warm stock if it has become too thick. Serve while creamy and warm.

Tips for Creamy Risotto

Use a wide saucepan so the rice cooks evenly. Stir regularly, but not aggressively. The rice needs time to absorb each ladle of liquid and release its starch, which is what creates the creamy texture. Begin checking the texture before the expected cooking time ends, since different rice varieties cook at different speeds.
For a deeper green color, blend the spinach just before adding it to the rice. Fresh parsley or basil can also be blended with the spinach for a more pronounced herbal flavor. Adjust the amount of greens to suit your preference.

Serving and Storage

Risotto verde pairs well with roasted zucchini, sautéed mushrooms, or a simple green salad. A little extra grated vegetarian cheese can be added at the table.
Refrigerate leftovers promptly in a covered container and use them within three days. When reheating, add a splash of vegetable stock or water and warm gently while stirring. The rice will absorb more liquid as it rests, so additional moisture helps restore its texture.
Risotto verde turns rice, spinach, and a few pantry staples into a comforting meal, and with a little patience at the stove it is approachable enough for everyday cooking.
